A vegetarian spin on chicken quesadillas, makes a tasty and filling lunch prep.
Ingredients
Tortilla's
Shredded Cheese
Tofu
1 Red Bell Pepper
1 Green Bell Pepper
1/2 Red Onion
Minced Garlic
Optional: Hummus, Salsa, Sour Cream
Preparation
Step 1
Press the tofu to get rid of any excess liquid. Thinly slice the tofu and add to a large non-stick pan with 2 tbsp of Olive oil. Cook at medium heat, stirring occasionally until golden brown. Typically 8-10 minutes.
Step 2
Wash your produce. Dice bell peppers, onions, mince garlic. Add to pan with tofu, season with salt, pepper, onion powder, etc. Add tomato paste to pan. Let cook for 2-3 more minutes & turn off heat.
Step 3
Butter your tortilla and place in a clean pan on low heat. Add cheese to 1/2 of the tortilla. Place tofu and vegetable mixture on top of cheese. Add another layer of cheese on top of the tofu & vegetable mixture. Fold quesadilla closed and flip, allow to cook for another 3-5 minutes on low heat, or until the cheese appears melted. (Optional, spread hummus on one side of the quesadilla for additional flavor)
Step 4
Refrigerate until ready to serve. Warm in the microwave, cooking in increments of 1 minute, stirring in between. (Optional: serve with sour cream or salsa).
