About the Recipe

Another Go-To of mine. The Mediterranean lunch box is one of those perfectly balanced meals. Providing mostly grains and vegetables, and including healthy amounts of fat and proteins. Give it a try and fall in love with yet another filling salad of mine.

Ingredients

  • Couscous

  • Chicken

  • 1 Red Bell Pepper

  • 1 Green Bell Pepper

  • 1 Red Onion

  • Lemon

  • Hummus


Preparation

Step 1


Start by washing your garbanzo beans under running water, then drain. Once drained, cover cooking sheet with foil and spread garbanzo beans evenly across sheet. Season with garlic salt, pepper, cayenne pepper, paprika, etc. Cook on high at 425 degrees for 20-25 minutes, or until golden.


Step 2

Bring water to a boil. Using the instructions provided to you on your package of couscous, pour in the couscous and allow to cook for indicated time (usually 5-10 minutes before removing from heat. Divide among 5 meal containers.

Wash produce. Chop bell peppers, onions, and garlic and add to a medium pan with Olive oil. Let vegetables sauté for 5-20 minutes, do not let get too soft.


Step 3


Top 5 meal prep bowls with the vegetable mixture, and the garbanzo beans. Top with a spoonful of hummus (this can also be done the day of).


Step 4


Warm meal when ready to eat in microwave for increments of 1 minute.
